01The Approach

Never the same
pizza twice.

Every time I make pizza, I make at least one I've never made before. That has always been part of the fun for me. I want people to love what they're eating and feel like they've discovered something.

The crust. Our pizza takes its cues from Naples, with an East Coast streak. The dough is a little bready and properly chewy, less crisp than a classic Neapolitan, with a deliberate bit of char for flavor.

From scratch. The crust and the toppings are made by hand, from the ground up. Each pie is about 11 inches: one per person, or better, two people ordering two different pies and sharing both.

Something new. Every week there's a pie nobody's had before. Dates and goat cheese. Feta and country hash browns. Sweet potato and roasted red pepper. Brussels sprouts. Some become regulars. Some get one glorious week.
